While a couple of years out of date, I actually recommend you, as the instructor, get this book and pick-and-choose the articles at each section end. Many of them are PDF and easily available at no cost to your students.

I should mention that I am VERY close to releasing my SWISHer semantic Web reference site with about 150,000 organized references. Please do return to this site; SWISHer should be available in the next week or three.
